Back with another one of my mom's recipes!
Ingredients
1 sweet potato per serving
honey
butter
salt
Directions
Wash and peel potatoes
Cut in half horizontally (long way)
Add about 2 inches of water to a wide pot
Add butter (about 2 tbsp)
Add honey (about 2 tbsp)
Add potatoes, make sure each potato is fully touching the surface of the pot, do not layer
Cover pot and simmer potatoes on medium-high heat
Check occasionally, poking center of potatoes until ALMOST soft
As water reduces, uncover pot, and turn heat to high to add brown color
Continue to let cook until soft
Do not overcook or potatoes will break
When brown, remove each potato from pot gently and top with pinch of salt
