Sweet Potatoes




Back with another one of my mom's recipes!



Ingredients

  • 1 sweet potato per serving

  • honey

  • butter

  • salt


Directions

  1. Wash and peel potatoes

  2. Cut in half horizontally (long way)

  3. Add about 2 inches of water to a wide pot

  4. Add butter (about 2 tbsp)

  5. Add honey (about 2 tbsp)

  6. Add potatoes, make sure each potato is fully touching the surface of the pot, do not layer

  7. Cover pot and simmer potatoes on medium-high heat

  8. Check occasionally, poking center of potatoes until ALMOST soft

  9. As water reduces, uncover pot, and turn heat to high to add brown color

  10. Continue to let cook until soft

  11. Do not overcook or potatoes will break

  12. When brown, remove each potato from pot gently and top with pinch of salt
